Brown Cows
When we were young
And all our dreams were new,
We dreamed a little farm
And cattle too.
A house, a barn, a hill
With Jerseys grazing down,
Near to school,
And not far from town.
We worked and looked
And planned, and always found
No matter what we schemed
The cows were always brown.

Sweet Potatoe Toffee Pie
Makes 1 (9-inch) pie. 1 (15-ounce) package refrigerated pie crust, or your own single pie crust recipe!
~Preheat oven to 350
3~ cups cooked mashed sweet potatoes
2~ cups toffee bits, divided
1~(14-ounce) can sweetened condensed milk
1~ cup unsalted butter, melted and divided
2~ large eggs
1 ~teaspoon vanilla extract
1~ teaspoon ground cinnamon
1/2~ teaspoon ground nutmeg
1/4~ teaspoon salt
1~ cup firmly packed brown sugar
1 ~cup all-purpose flour, sifted
~On a lightly floured surface,roll one pie crust. Roll into a 12-inch circle. Press pie crust into a 9-inch pie plate, folding edges under and crimping edges, if desired.
~In a large bowl, combine sweet potatoes, 1 cup toffee
bits, milk, 1/2 cup butter, eggs, vanilla, cinnamon, nutmeg, and salt. Beat at medium speed with an electric mixer until well blended. Pour into prepared crust. Bake, loosely covered with foil, for 40 minutes.
~ In a medium bowl, combine remaining 1 cups toffee bits, remaining 1/2 cup butter, brown sugar, and flour. Stir until combined. Gently spread on top of pie, and bake, uncovered, for an additional 20 minutes.
Cool for 1 hour.
Garnish with whipped cream and toffee
bits, if desired. Cut into wedges to serve

No babies, please!When my youngest daughter was born my daughter Ally was given a "big sister"
ID bracelet from the hospital staff. The bracelet became a prize possession and was something she showed
her sister often.
At three Ally had an ear infection and because of the early hour we visited the local hospital to seek treatment.
She was quickly seen and given medication and has since recovered nicely. While in the waiting room I noticed
her shoulders slumped and she was looking forlorn at the ID bracelet the nurse had given her a few minutes earlier. When I asked why she was so sad her response was "but I don't want to take a baby home..." So much for the stork!
